Summer Salmon


Serves: 4


  • 4 PrimeWaters® Atlantic salmon portions (5 oz each)
Vegetables Medley
  • 8 fingerling potatoes
  • 1 cup grape or cherry tomatoes, cut in half
  • 1 small red onion, thinly sliced
  • 1 tsp garlic, minced
  • 2 tbsp extra virgin olive oil
  • Diamond Crystal Kosher Salt and fresh ground black pepper – to taste
Herb Relish
  • 1 cup Italian parsley-finely chopped
  • 2 tbsp minced tarragon
  • 2 tbsp red onion, minced
  • ¼ cup extra virgin olive oil
  • 1 lemon (juice and zest)
  • Pinch of chile flake
  • Diamond Crystal® Kosher salt and ground pepper (to taste)


Herb Relish:

  • Zest and juice the lemon.
  • Combine lemon zest/juice with all other relish ingredients in small mixing bowl. Adjust seasoning with salt and pepper to taste.
  • Set aside and continue with the rest of the recipe.

Vegetable Medley:

  • Place fingerling potatoes in small, microwave-safe bowl, adding a pinch of salt and 2 tbsp of water. Cover with plastic wrap and cook in microwave on high heat for 2 minutes or until potatoes are tender, but firm.
  • Remove from microwave (they will be hot) and slice each potato in half lengthwise. Set aside.
  • Place 12” nonstick sauté pan over medium high heat. Add the olive oil.
  • When oil shimmers, add the reserved fingerlings, cut side down. Cook for 3-5 minutes until slightly browned and roasted looking.
  • While still over heat, add the sliced onion and toss to combine.
  • Add the minced garlic, halved cherry tomatoes, salt and pepper to taste.
  • Toss to combine. Set aside.


  • Pre-heat air fryer or oven to 400 degrees. Spray a small piece of aluminum foil with pan spray and place the salmon on the foil.
  • Either place the foil and salmon in air fryer basket or place foil and salmon on small sheet tray and place in oven.
  • Cook in air fryer for 5-7 minutes or until fish is cooked through and flakes easily, to an internal temp of 145°.
  • Cook in oven for 7-12 minutes or until fish is cooked through and flakes easily, to an internal temp of 145°.
  • Remove from air fryer or oven and compose plates.


  • Place a salmon portion on each plate and divide the vegetable medley evenly between all the plates. Serve the herb relish and lemon wedges on the side.
